Gourmet Simple

It is late summer in our small Swiss village. After plowing the potato fields, some potatoes are left behind. Small ones, thin skinned and pale in color. The village children, including our three, scurry through the fields carrying paper sacks or net bags and gather them up. Damp and covered with dirt, they need to be washed, wiped dry and cooked within a day or two. Sautéed in butter is the best way.
