food of the gods

notes in the margins
of her battered cookbook . . .
mother’s estate

Before the wedding she gives me recipes, food that costs little. Mostly offal: tripe in white sauce with peas and carrots; a roll of sausage meat coated in flour and stuffed with breadcrumbs; a casserole of lamb shanks and potatoes. Recession food that I never quite master. The tripe is runny, the sausage meat I mistakenly coat with self-rising flour so that it fills the Aga wood stove. Nevertheless, our marriage thrives. Sunshine and laughter. A photo album bulging with sepia happy snaps.
